This soup is perfect a cold winters day!
Carrot Ginger Soup 🍲
8 carrots, peeled and chopped
2 small zucchini, peeled and chopped
1 small onion, diced
1 apple, peeled and chopped
2 tbsp fresh ginger, minced
1 tsp turmeric
Pinch of cinnamon
4 cups vegetable stock
1 tbsp coconut oil
Pinch of sea salt and pepper
Melt coconut oil in a saucepan placed over a medium-high heat.
Add ginger and onion and cook about 4-5 minutes. Add all remaining vegetables, apple, and the spices. Stir well and cook until carrots are soft. Pour in the stock and bring to a boil, lower the heat and let everything simmer for 25 to 30 minutes.
Puree the soup using a blender or food processor.
