This is one of the easiest and most delicious things I’ve ever made! YUM! πŸ˜‹
Portobello Burger πŸ”πŸ„
2 Portobello mushrooms
1 kale leaf
A few cherry tomatoes sliced
A sliver of onion
1/2 avocado
1 tbsp tamari
1 tbsp olive oil
1 tbsp lemon juice
Vegan mayo (optional)
Sea salt and pepper to
Mash avocado with a fork and add lemon juice, mix them together well. Preheat the oven to Β°400. Remove the mushroom stems, coat the tops with the olive oil and tamari. Place mushrooms gills facing up on a baking tray lined with foil. Bake for 10 minutes on each side. I added Daiya vegan cheese to mine when there was 5 minutes left and let it melt. Once fully cooked remove from the oven and layer on the kale, avocado, onion and tomatoes. Spread the mayo on the down facing side of the mushroom that sits on top. Add salt and pepper to taste.
