I’ve been kind of obsessed with this simple dish the past few weeks. It’s so damn satisfying! It makes a great side dish or sometimes I have it as a meal on its own.

Baked Eggplant with Tahini
1 large eggplant chopped into small chunks (can also use about 4 fingerling eggplants)
2-4 tbsp oil (I like grapeseed or melted coconut)
1/4 c tahini
1 lemon juiced
2 tbsp water
Sea salt to taste
1 tsp sesame seeds
Set the oven to 350°, place the eggplant on a baking tray lined with greased parchment paper or foil. Drizzle the oil and sprinkle about 1/2-1tsp of sea salt on top. Mix well with hands and place in oven. Baking time is 40-45 minutes. For the tahini place all remaining ingredients except the sesame seeds in a bowl and mix well adding sea salt to taste. You can also use a high speed blender and slowly turn it up to high. When the eggplant is cooked it should be soft, mushy and smell fantastic! To serve pour tahini on top and sprinkle with sesame seeds. 👌👍
