This is one of my favorite go-to salads. It stores well in the fridge for a few days and is great to pack in a lunch. You can also add anything to it but I love it as it or with avocado. It’s filling, satisfying and high in protein and other important vitamins and minerals!! Simple Kale Salad 🍀
1 large bunch of curly kale chopped
1 carrot grated
1 beet grated
Pumpkin seeds (optional)
1 lemon juiced
1/4 olive oil
1/4 tsp sea salt
Place all ingredients in a large bowl and mix with your hands making sure to cover all of the kale leaves well with the oil and lemon juice. Get you kale on!!
