Tomato N’ Sprout Salad 🍅🌱
1 cup of assorted cherry tomatoes
Handful of sunflower, mustard and radish sprouts (or whatever sprouts you have access to)
1 tbsp pumpkin seed oil
Dash of sea salt
Cut tomatoes in halves and place on top of sprouts. Drizzle oil and add sea salt. Very simple, very healthy, very yummy!
I especially love fresh organic cherry tomatoes, they are so sweet and satisfying. I don’t like most store bought tomatoes and they are picked unripe and shipped to the store, by the time they change colour thy have lost most of their nutritional content and are lot as sweet.
