Herb Dressing 🌿
1/3 c olive oil
4 tbsp pumpkin seed oil
1/2 c apple cider vinegar (can also use balsamic vinegar and make it into a reduction by heating it on low for a few minutes for a thicker and sweeter dressing)
1 shallot minced
1/2-1tsp sea salt
1/4 c of chopped fresh herbs minced – I use chives, dill, rosemary, basil and mint. Can use 1-2 tbsp of dry herbs as well.
Place all ingredients in a glass jar or container and seal tightly. Shake well before using and store in fridge. This dressing gets better over time as the herbs fuse with the oil and vinegar.
