Πουτίγκα με ψωμί τζίντζερ Κάτω στρώση: 1 μπανάνα 1 λωτός 1 γ κρέας νεαρής καρύδας…

Ginger Bread Pudding
Bottom layer:
1 μπανάνα
1 persimmon
1c young coconut meat
1 c water
2 tbsp raw cashews
1 tbsp chia
1 date
1/2′ knob of ginger
1/4 tsp nutmeg
1/4 tsp cinnamon
Chia Layer:
2 tbsp chia
1/2 c water or almond milk
A few drops of stevia (optional)
Persimmon Jam:
3 dates
2 persimmons
1/4-1/2 c water
For the first layer place all ingredients in high speed blender and slowly turn it up, may need a tamper if using the vitamix. For the second layer mix all ingredients in a small bowl and let sit for 10 minutes stirring occasionally until thick. For the jam place all ingredients in a high speed blender and slowly turn it up until creamy and smooth. Layer each mixture into a bowl or jar and garnish with nutmeg and ground ginger.
