Chocolate Mouse 💩
12 oz package of silken organic tofu (soft or firm is fine)
2/3 c organic dark chocolate chips
1 tsp vanilla extract
Drain tofu and place in a blender, blend until smooth and creamy. Using the double boiler method melt the chocolate chips and then pour the mixture into the blender with the tofu. Add the vanilla. Blend the mixture again until the chocolate and tofu are completely blended. You can add some chocolate shaving or chips to garnish. Berries are also a nice addition. Pour into small ramekins and refrigerate for at least 2 hours to let the mouse firm up. It’s ready to serve.
